GERMAN CHRISTMAS STOLLEN GROCERY LIST: 8 cups flour, sifted 1 1/3 cups milk, lukewarm 2 yeast cakes I tbls. salt I cup sugar I cup butter 1 ¾ cups raisins I ½ cups almonds, grated 1/2 cup chopped candied cherries 2 tbls. butter vanilla-sugar (sugar stored with a vanilla bean) and confectioner's sugar. NOW TO WORK... First...Scald milk and let cool until lukewarm. Dissolve yeast in milk, add sugar and salt. Stir in enough flour to make a fluid batter, the consistency of thick pancake batter. Cover and let rise for several hours until it has doubled in bulk. This preliminary batter is called the "rising." Second...Work in balance of flour and butter. Kneed until a soft dough is formed and pulls away from bowl. Third...Knead in raisins, grated almonds and candied cherries. Cover dough and let it rise to twice its size. Sprinkle bread board with flour and roll dough out into an oval, about 1 inch thick. Fold in half, letting lower layer protrude. Place on greased baking sheet and again let rise in a warm, draft-free place. Brush with melted butter. Bake in fairly hot (400 degree) oven until done, 45 to 60 minutes. Brush with butter again while still hot. Mix confectioner's and vanilla-sugar and sprinkle on loaf. |
